鸡蛋Agg | 3个 |
杏仁粉Almond powder | 50克 |
面粉Powder | 15克 |
牛奶Milk | 70ml |
油Oil | 15克 |
糖Sugar | 60克 |
白巧克力White chocolate | 120克 |
抹茶粉Maccha powder | 10克 |
奶油Cream | 130ml |
歌剧院蛋糕 Opera cake的做法
加入50克杏仁粉,15克面粉,40ml牛奶,15克油搅拌均匀。Stir in 50g almond powder, 15g flour, 40ml milk and 15g oil.
加入三个蛋黄,搅拌均匀。Add three egg yolks and mix well.
将剩余的蛋白加糖打发,搅拌均匀。然后将面糊倒入模具,注意厚度适量,不要过厚。Whisk the remaining egg whites with sugar and add in three times to the well-beaten batter, stirring pour the batter into the mold, making sure it is not too thick.
烤箱预热5分钟,然后将模具放入,190度20分钟即可。烤完之后拿出来放凉备用,切成四等片。Preheat the oven for 5 minutes, then put the molds in, 190 degrees for 20 minutes. Remove from the oven and set aside. Cut into quarters.
准备30ml热牛奶,加入5克抹茶粉搅拌均匀。Prepare 30ml hot milk, add 5 grams of matcha powder and stir well.
将搅拌均匀的抹茶牛奶液体倒入锅中,加入30ml奶油和120克白巧克力加热融化。小火煮至冒泡即可。Pour the mixed matcha milk liquid into the pot, add 30ml cream and 120g white chocolate and melt. Simmer until bubbling.
抹茶白巧克力层完工。The white chocolate layer of matcha is completed.
然后将100ml奶油加糖加5克抹茶打发,抹茶奶油层也完工了。Then mix 100ml cream with sugar and 5g matcha, and the matcha cream layer is finished.
将杏仁面包上涂上抹茶白巧克力层,然后加面包片再涂抹茶奶油层,依次类推,最上面一层涂抹茶奶油层,用刀尽量抹平。Spread the maccha white chocolate layer on the almond bread, then spread the maccha cream layer on the bread slice, and so on. Spread the top layer on the maccha cream layer, and wipe it flat with a knife.
将准备好的蛋糕放入冰箱冷藏2小时以上,拿出来切开。Refrigerate for more than 2 hours and remove to cut.
将刀用火烤,然后切掉蛋糕边缘,使其平整好看,注意每切一次都要洗刀,用火烤。Bake with a fire knife, then cut off the edge of the cake to make it smooth and nice, making sure to wash the knife and bake each time.
最后在顶层筛一层抹茶粉,抹茶歌剧院蛋糕就完成了。Finally, a layer of matcha powder is sifted on the top floor, and the matcha song theatre cake is finished.

小贴士
1.注意夹层层可以适度厚一点,要不然侧面看不出分层。
2.切蛋糕的时候一定要把刀加热,这样切的才好看平整。
