In Japan, this product is referred to as matcha ice cream. Matcha is a fine powdered green tea. It is popular in the United States, especially at small ice cream shops and Japanese restaurants.

Heavy cream 淡奶油 250 ml
Whole milk 全脂牛奶 200 ml
Sugar 细砂糖 90 grams
Green tea powder 抹茶粉 10 grams
Egg yolks 蛋黄 2, separated

  1. Whisk together the sugar, egg yolks and milk until combined in a large bowl.
    在一个大碗中将细砂糖、蛋黄和牛奶搅拌均匀。

  2. Heat the mixture, cook to 185℉(85℃), a little bit hot is enough, do not have to boil.
    加热蛋奶液到185℉(85℃),感觉一点点热就够了,不需要煮沸。

  3. Add some hot mixture into green tea powder, mix them until combined, no partcles remained.
    在抹茶粉中加入一些蛋奶液,搅拌均匀,直到没有颗粒残留。

  4. Pour the green tea paste into the mixture, mix until combined.
    将抹茶糊导入蛋奶液中,混合均匀(我用的绿茶粉,研磨度不够,所以有颗粒残留)。

  5. Whip the cream to soft peaks. Whipping should stop once it has gained volume and the trail of the whisk can barely be seen on the surface of the cream instead of disappearing soon. It is always better to underwhip the cream for finishing later.
    将淡奶油打发至6-7成,滴落的淡奶油可以堆积在表面,而不是马上消失,但整体还是呈液体流动状。

  6. Pour the mixtrue into the heavy cream, mix until combined. Let the ice cream mature/age for at least 4 hours or over night in a covered container at 35℉(2℃)。
    将抹茶混合液倒入淡奶油中,混合均匀。放在密闭容器中在冷冻层至少四个小时或过夜。

  7. Done.
    完成(冷冻好的冰激凌如果有冰渣,可以再次打发,口感更细腻)。
